SPUMONI ICE CREAM


Here's a strange little recipe that isn't exactly traditional but is tasty, fun and easy.

1/2 gal. vanilla ice cream

1 (10 oz.) pkg. frozen sliced strawberries, thawed

1 tsp. vanilla

1/2 tsp. almond extract

2/3 c. chopped green maraschino cherries

3/4 c. chopped pecans

Red food coloring

1 c. whipping cream

1/4 c. sugar


Soften ice cream slightly. Quickly combine ice cream, strawberries, vanilla and almond extract in a chilled bowl; stir until smooth. Fold in cherries and nuts. Place in freezer while whipping cream.
Add food coloring to tint a delicate pink. Whip cream and fold in sugar. Fold into ice cream mixture. Pour into container and freeze.
