Spumoni (sort of) that tastes good and is good for you!

And here's another fun little recipe that also isn't traditional but almost borders on being sort of not so unhealthy.
Ingredients
2 cups no-sugar-added, fat-free vanilla ice cream, softened 1 (16-ounce) container fat-free frozen whipped topping, thawed and divided 1 teaspoon almond extract 10 Vanilla Meringue Cookies, crushed 2 cups no-sugar-added fat-free chocolate fudge ice cream, softened 1 ½ cups fresh or frozen raspberries, thawed ¼ cup sugar 1 tablespoon lemon juice
Preparation
Stir together vanilla ice cream, 1/2 cup whipped topping, and almond extract. Spoon mixture into a plastic wrap-lined 2-quart glass bowl, and freeze 15 minutes or until set.
Stir together 1 1/2 cups whipped topping and cookie crumbs; spread evenly over vanilla ice-cream mixture. Freeze 15 minutes.

Stir together chocolate fudge ice cream and 1/2 cup whipped topping. Spread over cookie crumb mixture. Cover and freeze 3 hours or until firm.
Process raspberries in a blender or food processor until smooth. Pour through a fine wire-mesh strainer into a small saucepan, pressing pulp with a wooden spoon; discard seeds. Bring raspberry puree, sugar, and lemon juice to a boil, stirring constantly; cook, stirring constantly, 2 minutes or until sauce is thickened.
Remove ice-cream mixture from freezer. Dip glass bowl in warm water 15 seconds. Invert onto a serving dish, discarding plastic wrap. Cut ice cream into wedges; serve with raspberry sauce and, if desired, remaining whipped topping.
NOTE: For testing purposes only, we used Edy's No Sugar Added Fat Free Ice Cream.

Here's a strange little recipe that isn't exactly traditional but is tasty, fun and easy.
1/2 gal. vanilla ice cream
1/2 gal. vanilla ice cream
1 (10 oz.) pkg. frozen sliced strawberries, thawed
1 tsp. vanilla
1/2 tsp. almond extract
2/3 c. chopped green maraschino cherries
3/4 c. chopped pecans
Red food coloring
1 c. whipping cream
1/4 c. sugar
Soften ice cream slightly. Quickly combine ice cream, strawberries, vanilla and almond extract in a chilled bowl; stir until smooth. Fold in cherries and nuts. Place in freezer while whipping cream.
Add food coloring to tint a delicate pink. Whip cream and fold in sugar. Fold into ice cream mixture. Pour into container and freeze.

A recipe for traditional spumoni
Real Spumoni should be sliced, not scooped.

Ingredients:
1 1/2 pints(3 cups)pistachio ice cream
1/3 cup chopped shelled pistachio nuts OR almonds(optional)
6 maraschino cheries
1 1/2 pints(3 cups) vanilla ice cream
1/4 teaspoon rum flavoring or rum
3/4 cup whipping cream
1/3 cup presweetened cocoa powder
1 10-oz. pkg. frozen red rasberries, thawed and drained
1/2 cup whipping cream
1/4 cup sifted powdered sugar
Directions:
Chill a 2-quart metal mold in freezer. Meanwhile, stir pistachio ice cream just to soften; stir in nuts, if desired. If necessary, refreeze till workable. Spread quickly over bottom and up sides of mold, bringing ice cream all the way to top. (If ice cream tends to slip, refreeze till workable.)
Arrange cherries around bottom of mold, pressing into ice cream. Freeze. Stir vanilla ice cream just to soften; stir in rum flavoring. Refreeze till workable. Quickly spread over first layer.
Freeze. Combine 3/4 cup cream and cocoa powder; beat till stiff peaks form. Quickly spread over vanilla layer. Freeze. Press drained rasberries through sieve; discard seeds. Combine remaining cream, powdered sugar, and salt; beat just till soft peaks form. Fold in berry pulp. Pile into mold; smooth top. Cover with foil. Freeze several hours or overnight. Peel off foil. Invert onto chilled serving plate. Rub mold with hot damp towel for a few seconds to loosen; lift off mold. Cut into wedges to serve.
Makes 12 servings.

What is Spumoni, Tony?

Spumoni, or spumone, is a molded Italian ice cream made with layers of different colors and flavors, usually containing candied fruits and nuts. Typically it is of three flavors, with a fruit/nut layer between them. The ice cream layers are often mixed with whipped cream. Chocolate and pistachio are the typical flavors of the ice cream layers, and the fruit/nut layer often contains cherry bits. The flavors usually consist of cherry, chocolate or coco bean, and pistachio in the colors pink/red brown and green.
This dish comes from Naples, and the three-flavored Neapolitan ice cream evolved from it. Spumoni is virtually unknown in Italy today, but it is popular in places with large Italian immigrant populations such as the United States and Argentina. August 21 is National Spumoni Day in the United States. November 13th is National Spumoni Day in Canada.
